Bacon Spaghetti


     The quickest way to make $100.00+ is to skip a week of grocery shopping. With all the recipe resources on the Internet, one can always find a recipe for whatever ingredients that are available. I made this spaghetti for lunch. It will also serve as my lunch for several days...cha ching...I was pleasantly surprised with the results of this super easy recipe; however, I made a few changes...fried the bacon and drained most of the grease off the bacon before adding the oil. The thought of all that grease was making my arteries a little nervous. I also added salt, pepper, and Parmesan cheese to taste. What should I do with my extra $100+??

Spaghetti with Bacon

Ingredients
1 pkg spaghetti (16 ounce)

1/4 Cup olive oil

8 pieces slices bacon, cut into 1/4 inch

4 cloves garlic, minced

1/2 Cup chopped fresh flat leaf parsley

Directions

1.Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink.

2.Meanwhile, heat the olive oil in a large skillet over medium heat. Stir in the bacon, and cook until the bacon has begun to shrink, about 3 minutes. Add the garlic, and continue cooking and stirring until the garlic has softened, and the bacon is crisp, about 5 minutes. Toss the drained pasta with the bacon, oil, and parsley to serve.

Bacon Potato Chowder

The other day a friend of mine gave me this little crockpot. It's just too cute. Crockpot meals are perfect for the days when you have to work past the traditional dinner hour. Today is one of those days. Here's my version of Bacon Potato Chowder.

Mini Crockpot Bacon Potato Chowder
Can of Cream of Mushroom Soup
Small can of corn
Glob of sour cream
two large new red potatoes, diced
6 slices of bacon chopped in 1/4 inch pieces
milk, as needed
some chopped onion or tablespoon of onion soup mix

Fry the bacon and remove from pan onto paper towel. Blot away the grease. Combine mushroom soup, corn, onion/mix, and sour cream. Stir to mix. Add bacon and potatoes. You may want to add a little milk at this point.

Cook 6-8 hours. Serves 2-4.

Simply Silver




     I was amazed when I visited my blog today and saw the date. It's been over two months since I've created a card! I've missed being on design teams, reading comments from faithful followers and being a blogger; however, I haven't missed making cards. That really seemed strange to me; until, I reflected on it for awhile. Making cards was secondary to making connections with people. It's the sharing that counts. Where do I go from here? As I look from the threshold of the golden years, I see several different roads to follow. I'm just going to meander down some of those roads and see what's out there...I hope you join me...
