Card Night/Tailgate Party



I have a confession...I've never been to a Tailgating Party. In the adult world that's like saying you're not in the popular crowd. That won't stop me from having a good time.  I'm a 60 year old Sue Heck! Here's one of the recipes for tonight's gathering. I hope you noticed that they are little footballs... if not, just pretend that you do. It's a Paula Dean recipe, need I say more...

BTW I don't know why everything is in capital letters. I'm not shouting.


Traditional Southern Deviled Eggs

Prep Time: 15 min | Cook Time: 10 min | Servings: 14 eggs | Difficulty: Easy

Ingredients:

  • 7 large eggs, hard boiled and peeled
  • 1/4 cup mayonnaise
  • 1 1/2 tablespoons sweet pickle relish
  • 1 teaspoon prepared mustard
  • Salt and pepper, for taste
  • Paprika, for garnishing
  • Sweet gherkin pickles sliced, for garnishing
  • Pimentos, for garnishing

Directions:

Halve 7 eggs lengthwise. Remove yolks and place in a small bowl.
Mash yolks with a fork and stir in mayonnaise, pickle relish, and mustard. Add salt and pepper, to taste.
Fill egg whites evenly with yolk mixture. Garnish with paprika, pickles and pimentos. Store covered in refrigerator.

Another Texas Sheet Cake Recipe

There's only one thing bad about having extra time on my hands...

Texas Sheet Cake V
Prep Time: 10 Min | Cook Time: 20 Min | Servings: 1 - 10x15 inch jellyroll pan | Difficulty: ---

Ingredients:

  • 2 cups all-purpose flour
  • 2 cups white sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sour cream
  • 2 eggs
  • 1 cup butter
  • 1 cup water
  • 5 tablespoons unsweetened cocoa powder
  • 6 tablespoons milk
  • 5 tablespoons unsweetened cocoa powder
  • 1/2 cup butter
  • 4 cups confectioners' sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts (optional)

Directions:

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch pan.
Combine the flour, sugar, baking soda and salt. Beat in the sour cream and eggs. Set aside. Melt the butter on low in a saucepan, add the water and 5 tablespoons cocoa. Bring mixture to a boil then remove from heat. Allow to cool slightly, then stir cocoa mixture into the egg mixture, mixing until blended.
Pour batter into prepared pan. Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center comes out clean.
For the icing: In a large saucepan, combine the milk, 5 tablespoons cocoa and 1/2 cup butter. Bring to a boil, then remove from heat. Stir in the confectioners' sugar and vanilla, then fold in the nuts, mixing until blended. Spread frosting over warm cake.

Lunch is Served


I decided to test a chicken salad recipe today. I guess it's called Holiday Chicken Salad because it calls for dried cranberries...We still have tomatoes from our garden, and they complimented this delicious recipe quite well. If you like crunch, you'll enjoy it. I've included the recipe and a link to the site where I found it.

Holiday Chicken Salad

Prep Time: 15 Min | Cook Time: --- | Servings: 12 servings | Difficulty: ---

Ingredients:

  • 4 cups cubed, cooked chicken meat
  • 1 cup mayonnaise
  • 1 teaspoon paprika
  • 1 1/2 cups dried cranberries
  • 1 cup chopped celery
  • 2 green onions, chopped
  • 1/2 cup minced green bell pepper
  • 1 cup chopped pecans
  • 1 teaspoon seasoning salt
  • ground black pepper to taste

Directions:

In a medium bowl, mix together mayonnaise with paprika and seasoned salt. Blend in dried cranberries, celery, bell pepper, onion, and nuts. Add chopped chicken, and mix well. Season with black pepper to taste. Chill 1 hour.

It's Official!





I have moved to part time status at work! Even though I love working at Kohl's, I need more time for exploring and adventures. Last night, I went to a photography class. Benson agreed to be my model this morning. He wanted me to capture his "good" side...

Our last day of the cruise is at sea. We just completed the towel folding class. In case you can't tell, it's an elephant. Afternoon tea is at 3:30 pm.
